WThis is a home-style interpretation of a cocktail found on our latest drinks list. It's a party-sized prepared mix which is loaded with essence of a holiday season, rendering it ideal for your festive gathering. Reserve the remaining syrup to use in brunch beverages, sweets, or to mix additional servings of this cocktail.
The Bikini Cocktail
Yields 10 people
To make the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Method
For the Citrus Syrup: Put all the ingredients into a saucepan, bring to a gentle boil, agitating to dissolve. After that, remove from the heat allowing it to cool down completely. Transfer to a sterilised bottle, close it and store chilled, where it will keep for up to four weeks.
To make Premix: Combine all the liquids into a big jug, let it rest for an hour, then filter it preferably using a fine cloth, to ensure it's perfectly clear.
For serving: Add 85ml of your batch mix into your cocktail shaker packed with ice, and agitate lightly for about 60 seconds to cool it down. Pour into a cold coupe glass or a similar vessel, top with the cranberries adding the final touch using a brief mist with the mandarin essence above the glass.
